Spring Green Soup

This soup is part of our #SpringRefresh, a gentle cleanse designed to support your liver and gallbladder.


Spring Green Soup:
2 medium to large or 4 small Japanese sweet potatoes 
One onion
3 large carrots or a couple small
3 stalks celery
Two cloves garlic
Stock, veggie or chicken
1-2 Bunches of greens, choose from: Kale, chard, spinach, dandelion, and bok choy 

Loose chop and on low heat, sauté the onion, carrots, and celery, garlic mix for 5 minutes
Add chopped sweet potato

Add splash of Apple cider vinegar (optional)
Add stock

Cook for 20 minutes on medium low heat
Add greens - stems removed and loosely chopped, cook for 3 more mins

Blend in vitamix or hand blend

SALT to taste
Serve with scoop of plain yogurt or avocado and splash of olive oil
