DANDELION GREENS WITH ALMOND VINAIGRETTE

INGREDIENTS:

1 bunch Dandelion Greens, stems diced and leafy greens cut in 2” pieces

2 Garlic Cloves

1⁄4 Cup Apple Cider Vinegar

Juice of one lemon

1 Tbls Honey

3⁄4 Cup EVOO

Pink Salt and Pepper to taste

1⁄2 Cup Toasted Almonds, chopped

METHOD:

1. Wash and dry your greens and place in a mixing bowl

2. Add garlic, vinegar, lemon, and honey to a blender. Blitz until liquified

3. With blender running on low stream in olive oil

4. Taste and season with salt and pepper.

5. Add almonds and pulse the blender a few times until desired consistency is reached.

The more you blend, the creamier the dressing. The less, the more textural.

6. Dress your greens and serve!

Note: you can make this dressing by hand instead of using a blender. Be sure to microplane the

garlic cloves and finely chop the almonds if doing by hand.
